2-3 size 'C's' or 'D's Chicken breasts boneless is best if you don't
like to do the de boning, Lay on counter preferably on a large cutting
board, and pound out flat. I use a roller pin or a mallet to do
this.Need to flatten out and they will grow to twice or more of
there size. Then you just flour both sides of them.
Get medium bowl and add ; few teaspoons of cream cheese,some chopped
onion(small cut) cooked bacon cut up small (I use 4-5 pieces) Some
grated sharp cheese, alittle blue cheese and about a third to half
package of frozen chopped spinach. I also like to chop up a med
Jalapeno pepper real small also.
Mix this all up real good in the bowl and add seasonings to your
liking. I use Garlic salt Salt, 6 season pepper
Now here is the fun part; you save that Bacon grease ,you pre heat
the oven to 350 and you take one boob at a time and put a good size
'Dollop' of the mix into the middle of it ,flatten alittle, and
then you roll it up like a taco, use tooth picks to pin it together
and the ends too. and when you have it 'sealed' as well as possible
to keep the ingredients in you put them into the bacon grease to
brown. You may have to add some extra oil to the grease.
Then you place them into a cake pan to place into the pre heated
oven ad add the bacon grease to the bottom, and cook for 25 min's
These will come out so moist and good you'll think you've died and
gone to heaven. We always do 1 or 2 extra as they will tastes great
the next day also. And they are a small very worth while pain to
make but are very moist because of all the good inner's. we sometimes
sub mustard greens or Collar greens too and just add different things
to our taste.
Note:
Don't flour until they have been rolled.
Fold the sides when rolling to keep the ingredients in.

pounds baby back ribs
1 chopped onion
1 clove crushed garlic
1 tablespoon hot red hot pepper flakes
1 tablespoon salt
2 quarts spicy barbeque sauce
Preheat oven to 325%
Cut meat into 2 or 3 ribs (whole).Place into 6 quart tall boiling
pot,cover ribs with water. Add onion,garlic,red pepper and salt,and
bring to a boil. lower the heat and simmer for an hour.drain. Place
the ribs in a 2 separate 14x8 inch baking pans one layer of ribs
in each, place standing on sides. Be sure ribs are packaged closely
together.Into each pan pour 2 cups of sauce,turning the ribs to
coat. Cover pans tightly with foil and bake for an hour. Remove
foil and place one pan at a time under broiler, approximately 4
inches from heat. Broil until the edges turn crisp and are browned,
about,about 5 or 10 minutes. While broiling, it's important to turn
the ribs to assure even browning. Serve with the remaining sauce
on the side. Another way I like to do is instead of putting under
the broiler I like to put them on the grill for 5 to 10 mins to
get that 'grill' flavor'

Turkey Casserole
This
is one my mother did for us and when she offered a 'special
meal' for our birthdays I'd always ask for this one:
Take the left over thanksgiving turkey, preferably the boob
meat and place in a glass baking pan. You can use any though.
Spread out in the bottom of the greased baking pan and then
cover with broccoli, which is only half way steamed. Cover all
the meat. Then you make a Sharp cheddar cheese sauce which you
make in a separate pan by adding milk or cream to the pan heat
to just before it boils ,add grated cheese to it till almost
thick then add a little flour while stirring so it doesn't clump
and stir it all till it gets thick and creamy. Pour all this
over the broccoli and Turkey and place into the oven at 350
degrees for about 25 mins or until hot/warm and you will be
having TG's favorite meal.
